Banana Oatmeal Blender Muffins

  • 2 cups oatmeal
  • 3 very ripe bananas 
  • 2 large eggs
  • 1/2 cup applesauce (replaces the oil)
  • 1/4 cup pure maple syrup
  • 1tsp cinnamon
  • 1/2 tsp all spice 
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1Tbsp vanilla


  1. Preheat oven to 350 degrees and then line a muffin tin with either liners or spray with non-stick cooking spray.
  2. Blend all ingredients in a blender until smooth. This takes about 2 minutes.
  3. When batter is smooth, spoon mixture into muffin tin until the wells are about ¾ full. 
  4. Sprinkle tops with oats.
  5. Cook for about 20 minutes or until a toothpick comes out clean. 
  6. Makes 12 muffins.
